POSITION: Executive Chef/Production Manager

Job Description

We are an international catering company that engages in a variety of catering services. We are searching for an EXECUTIVE CHEF/PRODUCTION MANAGER.

Job Summary

  • Reports to the Unit’s General Manager and is a member of the Unit Management Team.
  • In a secondary line of responsibility, the Executive Chef, Operations reports to the Regional Executive Chef via a dotted line.
  • Leading the Unit’s culinary department, with overall responsibility for food production and quality.

Responsibilities

The duties include, but are not limited to, the following:

  • Leads the implementation of stated culinary operational objectives and standards.
  • As a member of the Unit Management team, I work closely with the other three process owners and staff functions in the unit.
  • Overall responsibility for culinary staff management, which includes recruitment, training, development, and performance management.
  • Responsible for managing the culinary budget, including labour requirements, food expenses, overtime, and productivity targets, as well as menu and meal preparation reports.
  • Ensures that quality production requirements are met and maintained.
  • Establishing and implementing group standards and procedures helps to keep the workplace safe, secure, and healthy.
  • Enforces HACCP and regional safety regulations in accordance with gate group rules and procedures.
  • As an active SPICE program member, he or she stays up to date on the latest culinary trends and practices.
  • Works closely with Menu Development and Commercial to ensure that menu standards and production procedures are followed as agreed by the customer.
  • Ensures culinary representation during the menu degustation.

Required Skill or Experience

Minimum Qualifications

  • Experience with Offshore and Airline Catering
  • To qualify as a Chef by trade, candidates must have an associate or bachelor’s degree in Culinary Arts or a similar subject, as well as at least 4 years of experience as an Executive Chef.
  • Management/Leadership qualification is necessary.
