POSITION: Executive Sous Chef

JOB SUMMARY

Demonstrates culinary skills by personally conducting activities while also assisting in staff leadership and management of all food-related functions. Works to continuously increase guest and employee satisfaction while enhancing financial performance across all areas of responsibility. Assists in supervising all cooking sections to ensure a consistent, high-quality product is delivered. Responsible for leading and developing employees, including direct reports. Must guarantee that sanitary and food requirements are met. Responsibilities include overseeing all food preparation areas (e.g., banquets, room service, restaurants, bar/lounge, and employee cafeteria) as well as all support areas (e.g., dish room and purchasing) as needed.

CANDIDATE PROFILE:

Education & Experience

  • High school diploma or GED; 6 years of experience in the culinary, food and beverage, or similar professional fields. OR
  • A two-year degree from an approved university in Culinary Arts, Hotel and Restaurant Management, or a similar major; and four years of experience in the culinary, food and beverage, or related professional fields.

Core work activities

Assisting with Leading Kitchen Operations for Property

  • Gives direction for all day-to-day activities.
  • Understands employee jobs well enough to undertake duties in their absence or identify suitable replacements to cover gaps.
  • Gives subordinates advice and direction, including setting performance standards and monitoring them.
  • Uses interpersonal and communication skills to lead, influence, and inspire others; promotes solid financial/business decisions; exhibits honesty and integrity; and leads by example.
  • Promotes mutual trust, respect, and cooperation among team members.
  • Serving as a role model for appropriate behaviors.
  • Ensures that property policies are implemented fairly and consistently.
  • Evaluates workforce levels to ensure that guest service, operational requirements, and financial goals are fulfilled.
  • Develops and maintains open, collaborative relationships with employees, and ensures that others do the same within the team.
  • Solicits employee feedback maintains an “open door” culture, and monitors employee satisfaction data to discover and address employee issues or concerns.
  • Oversees and coordinates the actions of cooks and other food preparation personnel.
  • Show new cooking techniques and equipment to the crew.

Setting and maintaining goals for culinary functions and activities.

  • Creates and implements policies and procedures for purchasing and receiving areas.
  • Set goals such as performance, budget, and team objectives.
  • Communicates the importance of safety procedures by describing procedure codes, assuring employee comprehension of safety codes, and monitoring safety-related processes and procedures.
  • Manages department controllable expenses such as meals, supplies, clothes, and equipment.
  • Contributes to the budgeting process for areas of responsibility.
  • Understands and implements the brand’s safety guidelines.

Ensure that culinary standards and responsibilities are met.

  • Offers guidance for menu development.
  • Checks the quality of raw and cooked food products to verify they meet requirements.
  • Decides how food should be presented and designs creative food displays.
  • Recognizes high-quality items, presentations, and flavors.
  • Ensures adherence to food handling and sanitary requirements.
  • Ensures that all food products are handled properly and at the appropriate temperature.
  • Ensures staff retain the necessary food handling and sanitary certifications.
  • Follows purchasing, receiving, and food storage guidelines.
  • Prepares and cooks a variety of foods regularly, as well as for special guests or functions.

Ensuring Excellent Customer Service

  • Offers and encourages service habits that go above and beyond to ensure client pleasure and retention.
  • Improves service by communicating with guests and aiding them in understanding their needs, as well as giving direction, feedback, and individual coaching as needed.
  • Oversees day-to-day operations to ensure quality, standards, and customer satisfaction.
  • Demonstrates leadership in guest hospitality, provides exceptional customer service, and fosters favorable visitor interactions.
  • Communicates with guests to gather feedback on product quality and service levels.
  • Responds to and resolve visitor issues and complaints.
  • Enables staff to give exceptional customer service. Establishes rules to help staff understand objectives and parameters. Ensures that personnel receive ongoing training to understand visitor expectations.
  • Examines comment cards, guest satisfaction scores, and other data to identify areas for improvement.

Managing and Conducting HR Activities

  • Identifies others’ developmental needs and provides coaching, mentoring, or other assistance to help them enhance their knowledge or abilities.
  • Ensures that employees are treated fairly and equally.
  • Teaches kitchen colleagues the principles of effective cooking and dish presentation.
  • Oversees the performance appraisal process for direct report managers.
  • Collaborates with the Banquet Chef and Catering department on training in food knowledge and menu composition.
  • Monitors employees’ service actions and offers feedback to individuals and/or management.
  • Oversees employee progressive discipline procedures within areas of responsibility.
  • Ensures that disciplinary procedures and documentation are performed following Standard and Local Operating Procedures (SOPs and LSOPs), and supports the Peer Review Process.

Additional responsibilities.

  • Communicates information to executive teams, managers and supervisors, coworkers, and subordinates by phone, written correspondence, email, or in person.
  • Analyzes data and evaluates outcomes to determine the best option and address problems.
