POSITION: Assistant Director of Food and Beverage

JOB SUMMARY

This job involves helping to manage the food and drink services at the property, including restaurants, bars, room service, and catering (if applicable). The person in this role will create and carry out plans for the department and make sure they align with the brand’s service goals.

They will ensure that the food and drink operations meet the needs of customers and employees, while also working to increase sales and profits. The goal is to provide great food and services that meet customer expectations and offer a good return on investment.

CANDIDATE PROFILE

Education and Experience

  • Must have a high school diploma or GED and at least 6 years of experience in food and drink management, event management, or a related field.
  • OR a 2-year degree in Food Service Management, Hotel and Restaurant Management, Hospitality Business Administration, or a similar field with 4 years of relevant experience.

CORE WORK ACTIVITIES

  • Developing and Executing Food and Beverage Strategy and Goals
  • Work with team members to create new promotions, menu items, and food pairings.
  • Develop a food and drink strategy that matches the brand’s goals and ensures it’s put into action.
  • Make sure departmental goals are included in planning.

Leading Food and Beverage Teams

  • Keep regular communication among food and drink team members (like meetings and briefings).
  • Review current and potential business in the area and solve any challenges.
  • Check staffing levels to meet guest and operational needs.
  • Set clear expectations for the food and drink leadership team and hold them accountable.
  • Provide feedback to employees about service.
  • Listen to employee feedback to address any concerns quickly.
  • Share important information from meetings with relevant teams.
  • Estimate how much food and drink will be needed and place orders accordingly.

Maximizing Food and Beverage Revenue

  • Review financial performance to see if the food and drink service is meeting budget goals.
  • Ensure that cash and alcohol control measures are followed by all staff.
  • Encourage smart risk-taking to boost revenue.

Ensuring Exceptional Customer Service

  • Create an environment that meets or exceeds guest expectations in food and drink areas.
  • Analyze guest feedback to find areas for improvement.
  • Work on enhancing service quality.

Managing and Conducting Human Resource Activities

  • Make sure property policies are applied fairly; follow disciplinary procedures correctly.
  • Conduct annual performance assessments for team members.
  • Communicate emergency procedures to the team.
  • Hire food and drink leadership team members with strong skills and creative ideas.
  • Ensure new hires go through orientation and training to do their jobs well.
  • Set performance goals for team members and hold them accountable.
  • Provide guidelines so employees know what is expected of them.
  • Ensure staff gets ongoing training to understand customer expectations.
