Position: EXECUTIVE CHEF
Job Description.
We are an International Catering Company that specializes in numerous aspects of the catering industry, and we are seeking an EXECUTIVE CHEF.
Main mission
Responsibilities include reporting to the Managing Director, managing culinary production, and team management.
Additional missions (non-exhaustive tasks):
Culinary Production
- Create unique food that takes into account local and foreign cultures.
- Developing new menus and anticipating changing requirements
- Ensure production in terms of quality, timing, and cost in conformity with the specifications and the assigned budget (various contracts, special flights, etc.).
- Understanding and managing HACCP standards
- Address any discovered nonconformities and ensure that corrective, preventative, and improvement actions are implemented.
Culinary Production Management.
- Coordination of production, plating, and assembly processes in food production departments: hot kitchen, cold kitchen, vegetable production, and pastry.
- Prepare report cards, recipe sheets, and technical documents.
- Control material costs and manage the department’s stocks. Create a supply plan (permanent inventory, etc.) and anticipate needs.
- Adjust the production process based on forecasts to control the material gap.
- Analyze and report on the outcomes.
Management and Team Facilitation
- Supervise and manage staff in the Food Production sector.
- Create, transmit, and validate instructions.
- Evaluate the talents and potential of employees.
- Maintain a relay role between the Food Production Department, the other departments, and the General Management.
Required Skill or Experience
Professional qualities.
- Catering experience (restaurant, catering, etc.)
- Experience with team management and pedagogy
- Understanding of the sous vide cooking technique.
- Mastery of the Office Pack
- Bilingual French-English
Personal suitability
- Management ability and economic acumen, rigor, autonomy, spirit of initiative, interpersonal abilities, and adaptability.
- Responsiveness and customer orientation –
Educational background and required experience
- Diploma from a hospitality school (BTS minimum).
- At least 10 years of experience in this type of work, with management.
