POSITION: Fermentation Operator

GGBL maintains two locations and distributes four types of beverages: stout, lager, RTD, and malt, as well as spirits. The company is Ghana’s largest brewer, accounting for around 75% of the market.

Ghana’s economy is predicted to grow at a mid to high single-digit rate in a driven environment.

GGBL is undergoing major change, particularly in terms of accountability, quality maintenance standards, supply planning, cost reduction, and efficiency. Under its aims, GGBL will develop its employees and create an atmosphere that attracts and maintains the best talent.

As the Supply function, we will produce high-quality items in a safe environment at cost-effective rates, on schedule, and without faults.

The Fermentation Operator is ideally someone with extensive brewing knowledge. The incumbent’s Process Area is the key processing point in beer brewing, which includes yeast control, wort fermentation, beer centrifugation/yeast separation, and beer maturation. All of these operations are carried out by the Process Operator, who then reports to the Shift Brewer.

He works with the brewhouse, filter room, and utilities staff to maintain a consistent supply of filterable beer to packing lines.

The Filter/Centrifuge Operator is also accountable for his own and the casuals’ safety. He takes part in continuous improvement programs such as PIPs and department-wide efficiency initiatives. The post holder provides proper shift coverage, absolute support for colleagues, and a positive team spirit.

Principal Accountabilities

  • Contribute to workplace health and safety requirements. Frequently say and articulate that safety is our top priority. Be a transparent ambassador for safety by always behaving safely and constantly criticizing others’ unsafe methods and behaviour, reprimanding if needed. Enforce the site’s safety requirements, as well as the operational procedures for systems and equipment.
  • Manage the effective feeding of Fresh Yeast cultures in compliance with established company procedures.
  • Supervise and control the fermentation process/performance.
  • Perform CIP on process vessels and beer mains to ensure an infection index
  • Carry out Gulen beer centrifugation and yeast separation. Control operating costs by reducing process waste while maintaining appropriate housekeeping and hygiene at all times.

Qualifications and Experience Required

  • A post-secondary certification in a science-related field, expertise in the food industry, and an HND in biological or chemical science.
  • Candidates must also have a thorough awareness of the Permit to Work system, GGBL SHE policies, statutory requirements, and responsibilities.
  • Show an awareness of collaborative ideas, continuous improvement, preventive maintenance, and issue solutions.
  • Response to change in a positive viewpoint throughout a range of conditions and obstacles.
  • Possesses a positive attitude toward personal improvement and actively seeks opportunities to assist others in learning and growing.

Barriers to Success in the Role

  • Personal flexibility is required to function in a closely controlled manufacturing environment with fluctuating production and sales demand.
  • Individual and team training and development, as well as the sharing and application of newly gained skills, are not prioritized.
  • Inability to communicate and form positive relationships.
  • A lack of grasp of the commercial and demand agenda within the company.
  • The skill level is insufficient to successfully manage and maintain both new and old assets and technologies.
  • Unable to display critical leadership abilities.
  • Use of inappropriate words.
