POSITION: Sous Pastry Chef
Assist in the daily management of Pastry Operations, which includes coordinating and supervising daily kitchen operations, keeping food quality standards, and having extensive product knowledge.
Key Responsibilities
- Follow Hotel standards for food quality, preparation, recipes, and presentation.
- Maintain thorough product knowledge, including ingredients, equipment, suppliers, markets, and current trends, and offer recommendations for changes to kitchen operations as needed.
- Maintain a clean kitchen and personal hygiene, and ensure that all Pastry kitchen staff adhere to the company’s standards.
- Maintain positive working connections between departments and within them.
- Ensure that daily operations operate smoothly by double-checking that work has been completed correctly, reviewing the daily function sheet and mise en place lists, and establishing priorities in response to unexpected changes.
- Ensure that a training needs analysis is conducted for kitchen personnel, and that training programs are established and implemented to address those needs.
- Provide feedback for probationary and formal performance appraisal talks under business norms.
- Work with the superior to prepare and manage the department’s budget, and be accountable for cost-conscious actions by the staff.
- Demonstrate awareness of OH&S rules and procedures, ensuring that all procedures are carried out safely and under OH&S norms and that all Pastry Chefs are properly educated.
- Is aware of the responsibility of care and follows occupational health and safety regulations, policies, and procedures.
- Is knowledgeable with property safety, first aid, fire, and emergency procedures, and can operate equipment safely and intelligently while training others on the right procedures.
- Take action to fix a hazardous situation and warn supervisors of any potential dangers.
- Log security incidents and accidents under hotel guidelines.
Skills, Knowledge, and Expertise
- A gastronomic education certificate or equivalent is beneficial (apprenticeship/diploma/BA/BSc).
- HACCP certification
- 5 years of experience in a kitchen position, particularly pastry kitchen, in a five-star luxury hotel.
- Knowledgeable about food safety regulations
- Ability to operate as part of a team, flourish under pressure in difficult conditions, and come up with proactive, sensible solutions.
- Excellent written and verbal communication abilities.
- Excellent organization and time management skills.
- Maintains a professional, confidential, and ethical approach at all times.
- Demonstrates safe, responsible, and orderly behavior, as well as proficiency with computer and office equipment.
- Proficiency in Excel and Word is advantageous
