POSITION: Executive Chef
Manage all kitchen operations, including stewarding, with a focus on upholding hygienic standards and practices, staff training, and supervising the preparation and presentation of a consistent food product that satisfies customer expectations.
Key Responsibilities
- Manage all aspects of the Food Production and Stewardship operations to maximize departmental profit.
- With the Director of Food and Beverage, plan and organize successful food and beverage activities in the hotel and abroad.
- Keep an up-to-date file on hotel policies and procedures.
- Work with the People Services Manager to ensure that employees’ departmental performance is fruitful.
- Plan for future staffing requirements.
- Ensure that a training needs analysis of kitchen workers is conducted, and that training programmes are planned and delivered to address those needs (in coordination with the Training Manager as needed).
- Conduct probation and formal performance evaluations under business norms.
- Maintain current staff records and authorize leave requests.
- Coach, counsel, and reprimand employees, giving constructive criticism to improve performance.
- Participate in the development of the hotel’s revenue plan and marketing strategies.
- Determine with the Finance Director the minimum and maximum stockpiles of all food, materials, and equipment.
- Work with Finance to prepare and manage the department’s budget.
- Demonstrate awareness of OH&S policies and procedures, ensuring that all procedures are carried out safely and under OH&S norms and that all direct reports follow suit.
- Be aware of your duty of care and follow all occupational, health, and safety legislation, rules, and procedures.
- Be familiar with property safety, first aid, fire and emergency protocols, and how to use equipment safely and wisely.
- Take action to fix a hazardous situation and warn supervisors of any potential dangers.
- Log security incidents and accidents under hotel guidelines.
- Implement and practice HACCP.
Skills, Knowledge, and Expertise
- Gastronomic education certificate or similar (apprenticeship/diploma/BA/BSc)
- HACCP certification
- Minimum of five years in a culinary management job, preferably with an international 5-star hotel chain.
- A minimum of 10 years of cooking experience is required. Experience in a freestanding
- F&B operation is preferred.
- International experience is preferred.
- Banquet experience is preferred.
- Knowledgeable about food safety regulations
- Skilled in team management, autonomous work, problem-solving under pressure, and proactive thinking.
- Strong communication skills and the ability to build and maintain positive relationships with hotel personnel, clients, and vendors.
- Capability to identify and allocate duties effectively.
- Excellent organizational and time management skills.
- Maintains a professional, confidential, and ethical approach at all times.
- Maintain a safe, prudent, and organized work environment. Familiarity with sales, marketing, and promotional strategies is essential.
- Ability to operate computer and office equipment.
- Proficient with Microsoft Office
