POSITION: Chef de Partie
Job Purpose
Coordinate kitchen activities and prepare and present various dishes, while overseeing junior members of the Kitchen Brigade.
Main Duties
- Get ready beforehand the food, drinks, supplies, and tools required for the service.
- Prepare and present meals based on the restaurant’s offerings.
- Guide the Kitchen assistants, which includes Commis, Cooks, Kitchen Attendants, and Stewards.
- Tidy up and reorganize their workspace.
- In the Manager’s absence, hold shift briefings to make sure hotel activities and operational needs are understood.
- Collaborate with the Superior and People Services Manager to guarantee that the staff’s departmental performance is efficient.
- Implement on-the-job training following departmental guidelines and keep a record of each employee’s progress.
- Offer insights for probation and official performance evaluation conversations as per company policy.
- Make sure that new employees participate in Corporate Orientation during their first month of employment and that they complete departmental orientation within the first two weeks.
- Guide, advise, and discipline employees who violate hotel policies and departmental procedures, offering constructive criticism to improve their performance.
- Collaborate with the supervisor in the creation and oversight of the department’s budget and stay informed about financial objectives.
- Recycling should be done wherever feasible, and cost-saving strategies should be implemented for employees.
- Record security incidents and accidents according to hotel protocols.
- Report to their supervisor any challenges, feedback from guests or internal customers, and any other pertinent information.
Skills, Knowledge & Expertise
- Culinary education credential or comparable (apprenticeship/diploma/BA/BSc)
- HACCP accreditation
- At least 2 years of experience in the kitchen.
- Experience on an international level is favored.
- Skilled in Asian Cooking
- The capability to collaborate and convey information in a global setting
- Strong verbal and written abilities
- Familiar with food safety regulations
- Capability to collaborate within a team, excel under stress in difficult situations, and generate proactive, logical solutions.
- Skill in building and maintaining productive working relationships with hotel personnel and clients/vendors.
- Skill in recognizing and assigning tasks efficiently
- Outstanding organizational and time management abilities
- Employing a professional, discreet, and principled approach consistently.
- Operating in a secure, cautious, and systematic way
- The capability to use computers and office machinery.
- Familiarity with Microsoft Office is preferred.
