POSITION: Cost Controller

Position Overview
This position mainly assists the Accounts Department in managing cost control systems and procedures within the hotel to enhance profitability, by maintaining a consistently high standard of quality and service and supplying Management with all necessary cost-related information. Furthermore, you will be tasked with delivering a market analysis of the industry and competitors to assist management in making informed decisions regarding item costing and purchases.

- Direct Reports: Accounts Officer
- Collaborative Connections: Food & Beverage Team (Production & Service), Procurement and Stores Team.
Essential Duties and Responsibilities:

The primary duties associated with this role include:
- To manage the Food & Beverage cost by addressing wastage, pilferage, and improving efficiency.
- Prepare and analyze the F&B costs report on a daily, weekly, and monthly basis, recommend alternatives to reduce costs, and distribute it to management for decision-making.
- Conduct variance analysis for food and beverage, and ensure effective communication and investigation.
- Collaborate with restaurant management and finance to resolve matters related to food and beverage.
- Revise selling prices in the POS according to the directives from authorized individuals.
- Create and uphold a database for food and beverage inventory, ensuring that pricing is current and accurate.
- Regularly analyze the shortcomings in the controls established at the restaurant and propose enhancements.
- Review the daily Food & Beverage revenues report provided by the income audit to ensure the accuracy of covers and average checks.
- Perform daily audits of restaurants and conduct bar checks, compiling all end-of-shift reports generated from each POS till.
- Performs a monthly market survey focusing on high-value items.
- Frequently engages in the receiving process to examine product quantities, quality, and adherence to receiving procedures.
- Support management in determining menu costs to set sale prices for menu items.
- Perform a spot check in the receiving department to verify the accuracy of the scales and to ensure that the goods are inspected for quality.
- Examine and confirm voids, discounts, and complimentary items in the POS systems.
- Examine and assess completed requisitions to confirm that goods are issued only as requested.
- Review the sales expenses across all food and beverage outlets to confirm that they align with the budgetary limits.
- Update the system with the latest stock results and generate an inventory valuation report for management’s decision-making process.
- Reconcile all inventory accounts according to actual purchases and the actual inventory stock taken, and allocate the expenses to the respective departments based on their requisitions.
- Enhancing the material control system by incorporating goods received notes (GRNs), stock transfers, and updating sales data from the POS-Micros system at the restaurants.
- Carry out additional tasks as requested by management.
Necessary Skills or Experience
Credentials and Background
- A minimum of a B.Sc. or HND in Finance & Accounting from a reputable college or university, along with at least 5 years of experience in the field.
- Preferred experience includes a minimum of 3 years in Hotel Cost Control.
- Having an ACCA/ICA membership is a significant benefit.
Necessary Skills
- Excellent analytical skills are essential, along with a strong commitment to work and the ability to multitask. High integrity and objectivity, with a focus on adhering to proper procedures, are also required.
- Proficient in computer skills and knowledgeable in accounting systems, including POS systems, cost and inventory systems, Opera Materials Control, and the MS Office suite.
- Outstanding communication skills in both verbal and written English.
